• Born in Mexico, he fell in love with the Basque country and made it his home.
• Graduate of the Culinary Institute of America, CIA New York.
• He worked under Juan Mari Arzak in San Sebastian and at Paul Bocuse in Lyon.
• For 7 years he was sous-chef and head of R&D at Pedro Subijana’s Akelarre Restaurant (3 Michelin Stars).
• Currently he is a lecturer at the Gastronomic Sciences University Basque Culinary Center.
• He is the founder and chef-manager of Fleischmann's Cooking Group.
• He manages the famous grill Txoko Getaria as well as the haute cuisine restaurant Bailara and the gastrobar Maruka Gastro.
• He is CORPORATE CHEF at Sammic.
