To answer this question, in recent years at Sammic we have been focussing on creating machines that allow for this standardisation. Among such machines we can highlight the ULTRA vegetable preparation machines that include the Force Control System. What is the Force Control System?
The Force Control System is a system that allows us to measure and display on the screen the force used by the operator working with the vegetable preparation machine. In addition to measuring, it also allows the user to programme a sound and visual signal for a determined force. In this way, it is possible to establish the perfect force necessary to obtain the highest quality cut for each product and create the signal at that point. In that way, the operator working with the machine knows when they have reached the desired level of force for that product and can always maintain the same force to obtain a uniform cutting quality.
Thanks to this system, it is possible to establish the best cutting quality for each product and standardise the process to obtain cutting that is perfect, uniform and waste-free. This system is very useful for products such as cheeses, cold meats and other items where friction can result in organoleptic changes which reduce the quality of the cut.
