Congrats! You have been chosen and are about to embark on a great adventure. You are heading towards a very beautiful area that has an incredible culinary culture. Make sure that you utilize your time here to go and experience as many different things as possible. Go to Donostia and eat pintxos every week. Make sure to visit the local wine makers and butchers. If at all possible, check out some Idiazabl cheese makers, Martin Txiki is out of this world. You have been given this tremendous gift of an all expenses paid learning experience here in Pais Vasco and you should utilize it to the fullest, in the kitchen and out.
Come with an open mind and look at everything as a learning opportunity. Many things will be different and some things will not be so easy to understand. At Martin you will not be doing that much cooking per se. This does not mean that you will not advance your knowledge as a cook. It might seem weird that I am telling you this but it is the reality for most people that stage in a foreign country. You are coming as a temporary fixture in a permanent restaurant. Look at every day as a new learning opportunity. Come with a sense of humility and aim to prove to every one that works around you that you are hard working and eager to learn.
As you are getting ready for this adventure you should be working on your Spanish. It was very important to have some understanding of the language. The more you have the better you will adjust at Martin Berasategui since Spanish is all that is spoken in the kitchen.
On a more technical note. Bring a sharp pairing knife and a sharp chef’s knife. No need for any other knives. Bring side towels, aprons (black or white), chefs jackets, and a hat.
